This meal is perfect when you need some comfort food and as a bonus it’s nourishing and delicious. Chicken thighs, sweet potatoes, carrots, onions, garlic, jalapenos and collards combine with a rich broth of coconut milk, almond butter, chicken broth, cumin, cinnamon, coriander and sweet smoky paprika. Ingredients
This one is easy. We're not browning anything. We're just cutting everything up and loading it in the Instant Pot.
You're going to give it a good stir and then seal the top of the Instant Pot and set it to Pressure Cook and for 18 minutes.
When it's finished cooking let it sit for 5 minutes and then CAREFULLY do a quick release.
Garnish with lime juice, cilantro and avocado slice.
