Whole Roasted Fish

We're roasting a whole fish! You'll want about 1 pound per person and you can ask the person behind the counter to scale it for you. I'm leaning toward Red Snapper or Branzino - but whatever is freshest. We'll saute asparagus while the fish roasts and we'll cook sweet potato strips in the air fryer.

Prep

On this one, we will do all the prep during class. 

Ingredients

 1 Whole Fish- About a Pound Per Person - Prepped for Roasting - Cleaned(Gutted),Scaled & Gills Removed
 2 Lemons - One Cut Into Slices to Stuff Cavity and One for Juicing for Serving
 2 Cloves Garlic - Sliced to Stuff Cavity
 Herbs for Stuffing Cavity - Sprigs of Rosemary & Thyme
 Salt & Pepper
 EVOO
 1 Bunch of Asparagus
 1 -2 Sweet Potatoes Cut Into Strips

This one is going to be fun and it will up your cooking "wow" factor by an order of magnitude.

We're literally just going to score the flesh of the fish with 2 or 3 shallow cuts on the side facing up, brush the fish and the cavity with EVOO and generously salt and pepper the fish. We're going to stuff the cavity with lemon slices, garlic slices and herbs.

Put it in an oven that's preheated to 450 degrees and set a timer for 17 minutes.

While the fish is roasting we're going to prep and cook the potatoes and the asparagus.

We'll snap the asparagus and cut the sweet potatoes into strips - (think steak fries).

Toss the potatoes with EVOO or Avocado Oil and sprinkle with salt and pepper and put into air fryer at 375 for 10-12 minutes.

We're going to saute the asparagus in EVOO and hit it with a little salt and pepper.

You can just grab a fork and go barbarian on the fish when it's done or you can remove the fish from the bones and arrange it on a platter and serve with the asparagus and sweet potatoes. Either way, you'll want to be on the lookout for stray bones!
