Whole Roasted Fish

We're roasting a whole fish! You'll want about 1 pound per person and you can ask the person behind the counter to scale it for you. I'm leaning toward Red Snapper or Branzino - but whatever is freshest. We'll saute asparagus while the fish roasts and we'll cook sweet potato strips in the air fryer.

Shrimp Stir Fry

I love stir fry - it's quick, it's easy and it's delicious. I took the picture with shrimp and broccoli but good chance that I'll do Shrimp and Bok Choy on Sunday. The beauty of stir fry is that the meat and veggies are interchangable. Shrimp, Beef, Pork, Chicken, Broccoli, Snow Peas, Asparagus, Bok Choy, it all works. Just make sure that it's portioned into small enough pieces that it will cook quickly.

Fish Tacos with Collard Greens Slaw

Any fish will work for this one, but Mahi Mahi paired perfectly with the avocado crema, the collard green slaw and the corn tortillas. In keeping with reduced grocery store trips, feel free to experiment with substitutions. I made it the first time with pickled daikon radishes instead of jicama.

Instant Pot Chicken Sweet Potato Stew

This meal is perfect when you need some comfort food and as a bonus it’s nourishing and delicious. Chicken thighs, sweet potatoes, carrots, onions, garlic, jalapenos and collards combine with a rich broth of coconut milk, almond butter, chicken broth, cumin, cinnamon, coriander and sweet smoky paprika. And since it's in the Instant Pot we'll add easy to the bargain. Enjoy and be safe!
