My new favorite way to fix green beans - either Pecorino Romano or Parmigiano Reggiano will work
Ingredients
preheat oven to 425
line rimmed baking sheet with parchment paper
rinse green beans and trim ends if they're not pre trimmed. I buy the pre-trimmed bags from Costco to save time
coat the green beans with extra virgin olive oil or avocado oil and go easy on the salt since the pecorino or the parm will be salty. Place on the baking sheet in a single layer- don't over crowd.
stir the green beans after 20 minutes and grate the cheese and set aside
remove the green beans after another 20 minutes and sprinkle with cheese. place back in oven for 3-5 minutes for the cheese to melt. enjoy!
